Alaska pollock

Alaska pollock (明太, English: Alaska pollock) is a saltwater fish belonging to the cod family, and is mainly found in the East Sea and the North Pacific Ocean.

 

Pollock is called by various names depending on the season of catching, processing method, and drying method.

 

For example, the raw state is called ‘saengtae’, the frozen state is called ‘dongtae’, the completely dried state is called ‘bukeo’, the winter state is called ‘hwangtae’ after repeated freezing and thawing, the semi-dried state is called ‘kodari’, and the young pollock is called ‘nogari’.

 

Pollock is rich in nutrients such as protein, essential amino acids, calcium, phosphorus, and iron, and is popular as a health food.

 

The roe and intestines are used as myeongran-jeot and changran-jeot, respectively, and the flesh is used in various dishes such as stews, grilled dishes, braised dishes, and soups.

 

Pollock is a representative fish that has been loved by the Korean diet for a long time
